snap into spring salad

Ingredients

Spring Salad

  • 8 cups combination of the following: butterhead lettuce [chopped] + snappeas + radishes [sliced] + shallots [sliced]+ microgreens [optional] + fresh chives or mint [chopped]

  • 8 hard boiled eggs

  • 4 cups fruit [of choice -served on the side]

  • 1/4 cup sunflower seeds optional for topping

Luscious Lemon Feta Dressing

  • 1/4 cup olive oil

  • 2-3 Tbsp crumbled feta cheese DF optional

  • 1 lemon juice

  • 2 Tbsp fresh dill chopped

  • 7-8 chives minced

  • 1/8 tsp salt

  • 1/4 tsp ground black pepper

 

Instructions

Spring Salad

  1. Arrange veg on 4 plates.

  2. Top with legumes OR hard boiled eggs.

  3. Drizzle with dressing.

  4. Sprinkle with seeds.

Luscious Lemon Feta Dressing

  1. Add all ingredients to a food processor OR blender and blend until smooth.

  2. Store covered in a glass jar in the fridge for up to 1 week.


Recipe Notes vegetarian version: swap eggs + fruit for 1/2-1 cup beans of choice [per person]

  5. sunflower seeds: increased intake of nuts + seeds decreases inflammation, leading to a reduced risk of developing diabetes + cardiovascular disease. Storage tip: store sunflower seeds in the fridge to increase shelf life.
