This salad is bursting with functional ingredients - see the details on some of our favorites below!

  1. eggs: brimming with a wide array of nutrients + essential amino acids, eggs have been deemed by some as the “perfect food”. One of the all-star players in eggs is choline - a nutrient that aids in building cell membranes + improves communication between neurons [leading to improved cognition, memory and mood]

  2. microgreens: microgreens [aka baby plants] are bursting with polyphenols and antioxidants [sometimes up to 10x more than their mature counterparts!] that soothe + prevent inflammation

  3. mint: plants in the mint family may help to relieve allergic skin disorders + allergic asthma by inhibiting histamine release, leading to improved symptoms.

  4. lemon juice: citrus offers a potent dose of vitamin C increasing resilience to stress, decreasing inflammation and soothing the adrenal glands

  5. sunflower seeds: increased intake of nuts + seeds decreases inflammation, leading to a reduced risk of developing diabetes + cardiovascular disease. Storage tip: store sunflower seeds in the fridge to increase shelf life.
