treasure trove cookie dough bites

These cookie dough bites are delicious raw OR cooked and are perfect for those moments when you are looking for a sweet treat that won't leave you with an energy crash!

G A T H E R

  • 1 cup almond flour

  • 1½ Tbsp coconut flour

  • 3 Tbsp coconut oil or butter [melted]

  • 3 Tbsp honey

  • 1 tsp vanilla extract

  • 3 Tbsp almond milk

  • 1/8–¼ tsp fine grain sea salt [or to taste]

  • ½ cup mini chocolate chips [such as Lily’s chocolate chips]

H O W T O

  1. First combine the almond and coconut flour in a medium bowl.

  2. Then stir in the remaining ingredients, mixing well until a smooth dough forms.

  3. Chill the dough for at least 10-15 minutes for ideal texture for forming bites.

  4. Use a 1 Tbsp scoop to divide the dough into 12-15 portions. Using your hands roll the divided dough into balls.

  5. Store the cookie dough bites in freezer packaged into sets of two [if possible to decrease willpower from consuming all].

  6. Cookie dough bites keep in freezer for 1 month.
